Coffee is not just about brewing a cup. It’s a mix of craft, science, and heart. That’s why the Zurich University of Applied Sciences (ZHAW), together with the Specialty Coffee Association (SCA), has opened applications for the Certificate of Advanced Studies (CAS) in Coffee Excellence 2025/26.
This program is designed for people who want to go deeper into coffee science without losing touch with real-world practice. Backed by respected industry partners like Probat, BWT, and HACO Swiss, the CAS connects lab knowledge with everyday roasting, brewing, and tasting.
What You’ll Learn
The program is split into three modules:

Green Coffee – understanding the bean before the roast.

Transformation & Composition – what happens inside the bean during roasting and processing.

Extraction & Sensory – how to pull flavor with intention and measure it with confidence.
Each module runs for 21 weeks with around 6–7 hours per week. By the end, you’ll have logged about 125 hours per module, earned 15 ECTS credits, and received a certificate from ZHAW.
How It Works
This course is now fully online. You’ll join live virtual classrooms with experts, take part in interactive lab sessions (yes, they bring you into their labs via camera), and complete a self-led research project. The balance is clear: solid theory paired with practical application.
Who Can Apply

If you have a university degree and at least two years of coffee experience, you’re eligible.

No degree? You can still apply if you have three years of professional coffee work.

Good English writing and speaking skills are required.
Why It Matters
As someone who has been roasting for over 15 years, I’ve learned that guesswork doesn’t cut it. You need both instinct and science. When I roast a Nicaraguan at 205°C, I’m not just “feeling it.” I’m reading airflow, chemical reactions, and flavor development.
This CAS program builds that same mindset. It teaches you to connect what you taste with what’s happening inside the bean. That’s how you move from being a coffee worker to being a coffee professional.
